Susan’s Date Loaf
Susan joined the Woolgoolga Red Cross branch after making a sea change 3 years ago. She loves making her date loaf for the Red Cross Friendship Afternoon Teas, using a recipe given to her by her mother-in-law 30 years ago. Every time she makes it, it has to be “quality controlled” by her husband to ensure that it is still up to his and the beagles’ exacting standards (or so he says)! Give it a try yourself!
Ingredients
1 Cups of Chopped Dates
1 Teaspoon Baking Soda
1 Cup Boiling Water
50g Butter, cubed
1 Egg, beaten
¾ cups of Brown Sugar
1 & ½ cups Self Raising Flour
Method
Set own to 180 degrees C or 350 degrees F.
Combine dates & baking soda in a mixing bowl.
Pour in boiling water and mix. Let stand for 5 minutes.
Add butter and mix until it melts.
Add egg, sugar and flour and mix well.
Placed in a well greased loaf pan and bake for 40 minutes or until cooked.
Turn out onto a cooling rack.
